No Indian function is complete without the huge variety if sweet dishes. In fact eating a sweet dish is considered to be auspicious and there are many functions, which end with everyone eating laddoos. Like their salt counterparts, the type of sweets depends on the different states and regions of India. Most of the states of India have their own typical sweet dishes, which are at times not available in different states.
If you do have a sweet corner, it is suggested that you spare some time visiting different states of India and enjoying these sweetmeats. However, do not overdo it, because they are extremely rich and should be consumed in small quantities. These dishes are generally concocted from milk and its by-products but there are some sweets which are made of gram powder too, in fact one of the most common of all sweets, the laddoo is made up of gram powder.
Most of these sweets use sugar as the sweetening agent, but some of them also use jaggery, known as `gur’ in the local language. The best way to treat yourself to these sweets is to catch hold of a local person who would be the best option to help you around the various sweetmeat shops. Check out the malai roll which is one of the dry Indian sweets. Yes, Indian sweets are both dry types and ones that are dripping with sugar syrup (or with jaggery syrup).
There are some sweets which are specific to a particular festival, the most famous of them being the laddoo. No religious festival or no India wedding can be complete without these laddoos. If you so want you can also have another version of the ladoo covered with malai. It is aptly called the malai laddoo. If you visit Bengal, you will find most of the sweetmeat shops chock a full with different varieties of sandesh whish is the most popular sweetmeat available over there.
Though Rajasthan is famous for its gujiya you can also get the gujiya (Bengali style) in Bengal. In the state of Bihar and Uttar Pradesh, most sweets are sold by the name of barfi and some of the famous ones are stuffed badam barfi and carrot burfi. You can also check out the pantua dripping with sugar syrup and if you love it, you can check out another delicacy which too is served dripping with sugar syrup and is called the gulab jamun.
For the ones who prefer to stick with the syrup less sweet, there is the perennial favorite, the khoya chocolate square. There are various recipe books available which can help you to learn how to cook these sweets. Apart from that there are specialized classes, which will help you to become an expert too. However, it takes a lot of practice before you can cook a jalebi properly.
